Meal Plans Week 40

There’s not a lot of weeks left in the year and it’s kind of freaking me out a little. I’m a goal setter but my time management of said goals this year has been poor. i’m meant to have done so many more things but where does the time go?! That’s right… thinking about food.

We’ve had such lovely weather in Melbourne lately and I’m loving it, excluding today, today is meh. My heart still belongs to pasta but salads and lighter dinners are finally getting a bit of a look in, lucky them. Lucky for my thighs too;)

This week the spotlight is firmly on Spring with a nod to Halloween for anyone that’s celebrating that delightful evening next week. What’s the best costume you’ve ever warn for a costume party? I once made myself a Poison Ivy costume and it was pretty excellent, please note this was befoe I went back to my red roots so I had to cover my blonde locks with a cheap red wig of long curls. I think I died my hair red the following week. So Halloween pretty much inspired me to stop being someone I wasn’t and embrace (*cough* enhance, cos I’m dying it more red these days) my ranga soul. Thanks Halloween, you’re ace.

But back to this weeks delicious meal plans. Remember Plan A is for those that eat it al and Plan B is a vegetarian one. Plan A is still 2/5ths vego because eating meat more responsibly is a good idea peeps.

Plan A

Day 1: Skillet Lasagne with Ricotta and Greens Such a quick and easy way to get that crispy goodness we all love in lasagne.

Day 2: Salmon Soba Salad with Miso Ginger Dressing This is my warm weather version of a favourite recipe on the blog.

Day 3: Cauliflower and Chickpea Baked Eggs creamy, full of goodness with just a touch of parmesan these baked eggs are a great alternative to the tomato based variety.

Day 4: Coconut Poached Chicken Salad with a Thai Peanut Dressing: I haven’t made this in ages and it’s so damn tasty it’s about time to revisit it.

Day 5: Gorgonzola Stuffed Lamb Burgers: It’s BBQ weather so treat yourself to a delicious gorgonzola stuffed burger!

 

Plan B

Day 1: Cauliflower and Chickpea Baked Eggs creamy, full of goodness with just a touch of parmesan these baked eggs are a super tasty way to start the week. Just as good for dinner as they are at brunch.

Day 2: Lime, Ginger and Sesame Soba Noodle Salad: This salad is so yummy and refreshing, make extra for your lunches.

Day 3: Skillet Lasagne with Ricotta and Greens Midweek pasta hit! Such a quick and easy way to get that crispy goodness we all love in lasagne.

Day 4: Asparagus, Broad Bean and Mint Pearl Couscous Salad broad beans are so cheap at the moment so it’s the perfect time for this salad!

Day 5: Mushroom and Avocado Burrito: This burrito filled with herbed greens rice is next level! And that crispy cheese…
