Hellllooooo! How great is Spring? I’ve loved having some time off to enjoy this whole sunshine and day light savings thing we have going on at the moment. It’s a delight. Makes me feel all positive and glowy. And has me balancing out my pasta addiction with salads.
This weeks meal plans reflect the changing seasons and you’ll see that even more in the posts to come this week. I’ve thrown a breakfast plate in the mix for dinner because I’m all abour breakfast for dinner. It’s always an excellent time.
There’s a mix of salads, pastas and curries on both menus as that’s what I’m enjoying eating at the moment and think you’ll love it to. I can’t wait to share some other delicious new recipes with you next week. it’s been so good having a whole week in the kitchen to finalise lots of ideas.

Plan A
Day 1: Hummus Breakfast Plate. With or without some flat bread to dip in it this is a delicious way to start or, in this case, end your day.
Day 2: Lamb, Eggplant and Almond Curry. This curry is such a winner, buy a good quality cheaper cut meat to make your dollars count.
Day 3: Fried Tempeh, Black Rice And Avocado Bowl with Golden Beet Salad. The zingy coriander and ginger dressing ties this one together.
Day 4: Capsicum, Baby Kale and Fried Caper Linguini. So much flavour in an super easy pasta.
Day 5: Hot Smoked Salmon and Pink Grapefruit Salad – such a fresh and easy salad to round out the week.
Plan B
Day 1: Fried Tempeh, Black Rice And Avocado Bowl with Golden Beet Salad. My first tempeh recipe!The zingy coriander and ginger dressing ties this one together.
Day 2: Capsicum, Baby Kale and Fried Caper Linguini. Replace the anchovy with a little extra salt to keep it vego.
Day 3: Pesto, Broccoli and Baby Potato Salad – this salad is just as delicious the following day!

Day 5: Creamy Spiced Lentil Dahl – this freezes really well so chuck some in their for next weeks lunches. Look how organised you are.
So this last suggestion probs isn’t going to help you with your bikini body BUT it’s delicious so oh well: Get some friends together and make a peanut butter and chocolate skillet cookie. You will not regret it.
