This weeks meal plans are ready to go! There’s varied flavours across all the dishes but the overall theme is things to keep you healthy and warm, which is pretty much my current life motto.
I”ve spent a whole lot of the last week in the kitchen testing new recipes and it’s been so good to have time to get creative and work my back log up again. This means I’ve got lots of great things to share with you in the next few weeks and I can’t wait to include them in these meal plans.
Remember it’s totally fine to take some liberties with the vegetables in the recipes and use what you have on hand. If you have left over veg at the end of the week try chopping it up, tossing in a pan with garlic and then mixing it into a fritter batter. It’s a great way to cut down on waste and you can eat them for breakfast, lunch or dinner.
Plan A
Day 1: Golden Coconut Tofu Buddha Bowls. A vegetarian start to the week that won’t leave you missing meat.
Day 2: One Pan Chicken Thighs with Tomato, Chickpea, Basil and Mozzarella Why wouldn’t you want to eat stretchy mozzarella smothered chicken?
Day 3: Salmon Soba Bowls With Miso Ginger Broth. This beautiful broth and gently cooked salmon will have you feel good from the inside out.
Day 4: Soy Braised Shiitake Mushrooms with Greens and Brown Rice. The shiitake mushrooms have so much flavour is the delicate and balanced dish.
Day 5: Turkey Meatballs on cauliflower puree some healthy comfort food to round out the week.
Plan B
Day 1: Quick and Easy Hangover Noodles. Cos Mondays sometimes feel like an hangover.
Day 2: Golden Coconut Tofu Buddha Bowls. Yum, all the yum buddha bowl things.
Day 3: Cauliflower and Chickpea Turmeric Curry. Simple and delicious curry for that midweek slump.
Day 4: Vegetarian Huevos Rotos. What’s better than breakfast for dinner at least once a week?
Day 5: Mushroom Chickpea Pizzas. Chickpea Pizzas YUMMM or you could use your favourite pizza base?
