HOW TO MAKE CAFE WORTHY AVOCADO TOAST AT HOME, SO YOU CAN AFFORD YOUR RENT

I don’t usually post on a Saturday but today I’ve got something a little special for you: an exciting announcement and an easy recipe for how to make cafe worthy avocado toast at home. The recipe is mostly about how to plate this simple breakfast to make it look like it’s worth at least $18, because apparently that’s what we spend on brunch in Melbourne and why so many of us can’t afford to adult. Apparently.

So that exciting little announcement! I’ve been selected as a finalist in the Rising Social Star competition and as part of this experience I’ll be responding to three briefs over the next few weeks. The competition is sponsored by Woolworths so i’ll be tagging them in the posts too! The first one, I’m sharing today and will post on Insta tomorrow morning and it’s all about plating! Making my food look blog/insta ready isn’t something I manage to do for every meal but it’s amazing how beautiful you can make your food look just by being a little more careful about how you arrange it on your plate. There’s been a lot of attention on the amount millennials spend on avocado toast in the media lately. I make avocado toast at home all the time and rarely order it out, but just because I’m foregoing the brunch experience (so I can afford my rent, not buying avocado toast isn’t going to get me a house!) doesn’t mean I can’t make my toast look just as amazing at home.

I’ve also included smoked salmon and an egg in my recipe because we all know it’s those extras that really get you at a cafe… if it wasn’t for those you two would be a property developer worth millions;)

Serves 2

Ingredients

1 Avocado

2 cups spinach

2 slices sourdough

2 eggs

80 grams smoked salmon or ocean trout

1 radish, finely sliced

2 lemon wedges

1 tsp olive oil

salt and pepper

1 finely sliced pickle

hot sauce to serve

Directions

Place a medium sized pan on medium high heat. Add spinach with a little bit of water and cook until wilted. Remove and set aside.

Finely slice 1/2 the avocado and mash the other half. i do this so you get evenly spread avocado but still make it look pretty.

Put 1 tsp of olive oil in your hot fry pan. swirl then crack in he eggs, spaced well apart. cook until white is almost set then turn off the heat and let them finish gently while you lightly toast the sourdough.

To serve: spread the mashed avocado evenly on the toast. Top with the sliced avocado, fanned out at one end and the wilted spinach on the other end. Place on one side of the plate. Next, fold two small slices of the smoked salmon into a fan shape and place in front of the sliced avocado side of the toast, it should lean against the toast. Do the same with the egg but on the right half. Place five slices of avocado and 3-5 of pickle at different points on the plate. Dot on some hot sauce, place a lemon cheek or wedge on the plate. sprinkle the avocado and salmon with herbs. Generously season the avocado.

There you have it, a cafe worthy breakfast at home. And you should be able to get 4 serves for your brunch money!

Tips for making it look all pretty without crazy cooking techniques:

  1. Use complimentary colours like the greens, pinks and yellows in this pink.
  2. Build the meal from one point in the plate.
  3. Use finely sliced or chopped garnishes, nothing to chunky.
  4. Stick to odd numbers with slices of things when convenient.
  5. Don’t over fill the plate (this is also good for you!)
