Sunday funday? Sunday prep day? How do you organise your week? This week I’m doing the meal planning for you… for the 16th week in a row! Now if only I’d offer to do your shopping rather than only writing the lists – so selfish of me 😉
This is also the day I arrive home from holiday eeeeeeek. To soften that blow this weeks plan is full of some of my favourite things, like a creamy pumpkin pasta, super easy one pot chicken noodles (that will probs be the first thing I want to make). The sweet potato and peanut curry that’s my long time favourite and a spicy stir fry. Not to mention a really delicious vego lasange and some okonmiyaki because it’s my favourite thing to do with leftover cabbage ever. The leftover cabbage is coming from the ramen that’s also in Plan B this week. Have a peruse and see if either plan tickles your fancy. For the newbies, shopping lists are directly after each plan!
Plan A
Day 1: Creamy Pumpkin Pasta with Crispy Sage this pasta is so flavoursome and delicious and the sauce is sort of velvety – yum. I’ve added a bunch of rocket into your shopping list so you can make a simple rocket parmesan, and balsamic salad.
Day 2: Green Thai Chicken Stir Fry such a quick and easy stir fry and the lychees are optional.
Day 3: Prawn Risotto there’s this garlic butter stuff I drizzle over the top of this risotto and it’s killer. Have any leftover rocket salad from day 1 on the side.
Day 4: Sweet Potato, Lentil and Peanut Curry so easy and hearty – one of my favourites!
Day 5: One pot 15 minute chicken noodle soup speaking of easy. One pot and 15 minutes of your time and you have a super delicious chicken noodle soup without any nasties.
Plan B

Day 2: Creamy Pumpkin Pasta with Crispy Sage this si also a little creamy thanks to the pumpkin puree.
Day 3: Quick Spicy Ramen anything with ‘quick’ in the title rocks my boat on weeknight.
Day 4: Okonomiyaki this should also have quick and easy in the title. It’s a simple vegetarian version you can easily make from last night’s leftovers.
Day 5: Vegetarian Lasange This is not quick. Sorry! The rest of the week has been a breeze so a little extra effort tonight should be easy. And you can sip on a glass of wine while it bubbles away. Plus if you’re not feeding a crowd then the leftovers can be frozen in portions ready for you to whisk to work on Monday. You’re so organised!
