This simple little recipe is delicious for lunch or dinner and can be made with very little kitchen equipment. I know I’ve posted a few noodle based recipes lately but that’s because they’re so good for this warm weather we’ve been having, a 30 degree spring days (celsius for you international peeps) is crazy for Melbourne, so maybe I’ve gone a little crazy for cold salads too. Just maybe.
VANILLA AND COCONUT CHIA PUDDING
Nutritious, pretty and yummy breakfasts like this don’t need to be time consuming. I love a breakfast that I can prepare before going to bed and then have it ready to go in the morning when time is more important to me. I want to be the kind of person that can get up really early and exercise, make a delicious breakfast and get to work in time… but I’m not! ICED COFFEE POPSICLES (VEGAN!)
Hello summer heat. When the days start at totally unnatural temperatures and you still want your morning coffee these are the tasty solution. You need a really good quality almond milk for this recipe as anything too thin won’t have the same flavour or effect. You can sweeten the almond milk with a date or maple syrup – or leave it unweetened and let the bitterness of the coffee break through. If you wouldn’t normally sweeten your coffee then don’t sweeten this!

BREAKFAST SALAD

Because it’s acceptable to eat salad at all other times of the day so why not breakfast? I know fruit salad is a breakfast staple but I don’t really like fruit salad. It makes me think of nasty hotel breakfast buffets or syrupy concoctions. This is a savoury salad, full of greens and they typical things you might eat for breakfast – just in a  salad.
MISO BUTTER GLAZED ASPARAGUS
The first time I bit into these charred and glossy spears I swore, with pure joy. And then I went and boiled an egg because I thought that would be amazing with them and called it lunch. I ate all the asparagus (whoops, that’s apparently not a great idea…). Then I licked the bowl. These are seriously that good. And I do realise I’m talking about asparagus.
THE BEST BANANA BREAKFAST PARFAIT
This tastes like a banana cream pie, but better, because it has coconut and different textures and the creamy banana bit tastes and feels (in your mouth obv, don’t go running your fingers through it you weirdo) like mousse. And yes, it’s just all kinds of crazy good. I want to eat this for breakfast every day. For ever. Until I’ve od’d on banana and I’m like, ew get that away from me (won’t happen, no way). Can you tell I’m a little bit excited about this one?
