This simple little recipe is delicious for lunch or dinner and can be made with very little kitchen equipment. In fact just a pan or a sandwich press is all you will need, and basic things like a knife, plate and spoon but if you don’t have those I’m guessing you’re not big on cooking and probably aren’t even reading this. Good chat.
Anyway… cauliflower takes on such a delicious sweet nuttiness when it’s roasted or grilled like this. Perfect with the creamy dressing and fresh parsley and almond salad. It’s also brilliant with some coriander pesto on top.
You could also have this with some quinoa, polenta, brown rice or mashed sweet potato on the side. If you’re cooking for more than 1 person just times by that number and everything will work out the same.
Serves 1
Ingredients
2 x 1 inch cross section slice of a small cauliflower
1/2 tsp olive oil
1/4 tsp paprika
1/4 tsp chilli flakes
1/4 tsp ground cumin
2 Tbs greek yoghurt
1 tsp tahini
a squeeze of lemon juice
To garnish (or just use pesto)
1/4 cup parsley
1 tbs chopped roasted almonds
Directions
Heat a pan or sandwich press. Mix together spices and rub into your cauliflower slices, along with the olive oil. Place in the hot pan (or sandwich press!) and grill on each side until golden and just tender.
Meanwhile, mix together the yoghurt, tahini and lemon juice. Once cauliflower is cooked dress with sauce and sprinkle parsley and almonds over the top.
