Chilli and tomato are great friends. And this is a great homemade sauce to add pizazz to sandwiches, burgers, wraps, have with roast vegies or meat. It’s free of nasty additives and full of flavour.
Ingredients
1 Tbs olive oil
500g tomatoes, roughly chopped
3 red chillies, finely diced
3 spring onions, finely sliced
1 clove of garlic
1 bay leaf
1 tsp salt
1 Tbs oregano leaves
1/2 tsp coconut sugar (optional depending on sweetness of tomatoes)
1 Tbs lemon juice
1 Tbs chia seeds
Directions
Put a medium saucepan on low heat and add oil, once hot add the spring onion, chilli and garlic. Saute for a couple of minutes until softened then add the chopped tomatoes, 1/4 cup water, bay leaf and oregano. Cook on low heat, stirring frequently, adding more water if it gets too dry. After 30 minutes add the lemon juice, salt and chia seeds. If you think it’s necessary add the coconut sugar at this point. Cook for another 5 minutes and then leave to cool in pan. You can use it whilst hot if you can’t wait!
Once cool transfer to a jar or tupperware container and keep in the fridge.
