Guac and corn chips… is there any better snack? This is a favourite late afternoon nibble of mine (or as a series of nibbles with drinks, including popcorn cauliflower florets and spicy sweet potato crisps). It’s a super simple snack and you probably don’t even need the guac recipe but this is how I like mine! I know you wanted to know ha. And guess what? Baked corn chips are friggin fantastic! Skip the fried and pop some tortilla’s in the oven.
I make my own tortilla’s but that’s not neccessary. Just find some good quality tortilla’s and use those. If you’re not making your own skip the first step. A great tip for checking the heat of the chilli you’re using is to cut a little off and hold it to the tip of your tongue very briefly, you’ll be able to judge the heat very easily without killing all your tastebuds.
Ingredients
Guacamole
1 rip avocado
1/2 clove garlic
1 spring onion
1 tomato (diced, seeds removed)
1/4 cup coriander
1/2 a finely diced chilli (seeds removed if it’s a hot one)
1 lime (zest and juice)
Chips
10 small fresh corn tortilla or to make your own 1 cup masa de lista flour.
Salt to season.
Directions
Preheat oven to 180 degrees celsius. In a medium bowl mix the flour and 1 cup of room temperature water together. Roll this mixture into ping pong ball sized balls, press each ball in a tortilla press or place baking paper on a chopping board, top with a ball of dough, follow with another piece of baking paper and press down firmly with a small frying pan to make a tortilla. Put the small pan on a moderate heat, and toast each toritlla for a minute or two each side.
Remove your freshly cooked tortilla from the pan (or open the bag you have purchased) and cut into 6 triangular pieces, with a sharp knife you can cut a whole pile at once. Line an oven tray with baking paper and place tortilla chips in a single layer. Bake for 20-30 minutes, until very crispy. Season.
While chips are making mix together all above ingredients (excluding the tortilla’s haha) in a bowl, season. Serve chips and guacamole together. Happy times.
