These could be called chocolate, date, almond, coconut bliss balls as they are rather coconutty too. But then I would just be listing ALL the ingredients. Well almost. Super simple to make and a delicious snack. For whatever reason they taste better after they’ve rested in the fridge for a bit. I don’t know how long this phenomenon occurs for though as they only lasted 2 days in my house!
Start rolling.
Ingredients
1 cup almonds
1 cup medjool dates (soaked in hot water for 20-30 mins)
1.5 Tbs coconut butter (make your own see pheebs foods for instructions)
1-2 Tbs raw cacao powder
1/3 cup rolled oats
1 Tbs coconut cream
1 tsp vanilla extract
Desiccated coconut to roll in
Directions
Makes 16.
Drain dates and reserve the water. Put all ingredients (excl. water) in a food processor and process until combined. It should start to come together, if it is not sticky add some of the reserved date water.
Roll into walnut sized balls (walnut in its shell!) and then roll in the desiccated coconut. Leave in the fridge for an hour so they become firm. Store in an airtight container in the fridge.
