6 HEALTHY SANDWICHES, ROLLS AND WRAPS THAT WILL UP YOUR LUNCH GAME

Avocado and Egg Snadwich

A really good sandwich or roll is so satisfying. Yummy flavour combinations between two pieces of bread and you end up so far from the soggy nightmares of your school days. I’ve been known to happily eat a sandwich for dinner (ummm has anybody not done this?). In reality they’re just another version of a burger and that’s dinner food so why not all other sandwiches? Come on, give me one reason?! They’ve got all the parts of a nourishing meal, complex carbohydrate, vegetables, protein. You can even have a side salad if it’ll make you feel like it’s more of a meal.

At the moment my lunches and dinners oscillate between something I can eat out of bowl, and something I can roll up or sandwich between sourdough. All of the combinations can pretty much swap their vessel. A burger can become a sandwich (unless you’re American then anything that is not a ground beef patty is just going to be called a sandwich), a wrap can be layered into a roll, or a burger can be wrapped up in any variety of wrappable (apparently not a word, but I’m rolling with it – see what I did there? Haha) thing. Lettuce leaf? Why not? Chickpea flat bread? Sure. Some sort of crepe business? Cool. You do your thing. I’ll provide the filling inspiration.

The first sandwich is something I often eat for breakfast, but in true sandwich fashion it can be any time of the day food. It’s also a recipe I haven’t shared before and so quick and simle to make!

 

1.Avocado and Egg Sandwich (vegetarian)

Ingredients

Two slices of sourdough

1 tsp olive oil

1 egg

2 slices fresh mozzarella

1/3 avocado

pinch chilli flakes

1 Tbs spring onion finely sliced

1 handful spinach

Directions

Preheat oven to 220 on grill setting. Lightly toast your bread. Take one slice of bread and lay the cheese slices on it. Sprinkle with spring onion and place under the grill until just melted.

Meanwhile, heat olive oil in a small pan. Once hot crack in your egg and fry on medium high heat. When the white is almost set flip the egg and seal on the other side for 30 seconds.

Spread non cheese piece of pread with avocado, sprinkle with chilli and season with salt. Add spinach and top with the egg and cheese covered piece of bread. Slice in half so you can see that yolk!
