The year is passing so quickly, especially now that life is getting a little more normal and my social life is gearing up. Gearing up just enough, I’m so not interested in jam packing life the way I used to. I used to go to multiple events in a night, now I consider it a treat to visit two bars on a night out!

There has been lots of eating out though, and I need to reign that in so I can get back in the kitchen! There’s so much I want to cook at the moment and I haven’t even had anyone over for dinner yet. Soon.

For now, meal ideas for you.

Breakfast

Local cafe full? Make these easy summer baked eggs at home.

Blueberry get your glow on smoothie is an every morning sort of vibe.

Lunch

Creamy Pesto Zoodles with Roast Tomatoes and Pesto, this vegan number is perfect at room temperature too.

Salmon, Zucchini and Potato Cakes. You can freeze these!

Dinner

Hummus with Grilled Chicken, Herb and Lemon Salad an all time favourite.

Zucchini and Ricotta Stuffed Pasta Shells. Fresh and bright pasta bake.

 

Fish Tacos with Garlicky Corn Salsa. I’m obsessed with this easy dinner. This one is sitting pretty on Patreon.

Vermicelli Noodle Salad with Ginger and Soy Mushrooms. The mushrooms have so much flavour!
