TERIYAKI CAULIFLOWER BOWL

You all know that cauliflower is one of my favourite vegetables. It’s just so adaptable and tastes so different when cooked in different ways. I have love it since cauliflower cheese was my favourite ever vegetable dish as a kid and I don’t think I will ever get over it. So this week I’ve reworked my favourite chicken Teriyaki bowls… and made them vegetarian because it’s a good idea to eat more plants!

CHOC MINT BLISS BALLS

I love choc mint, it’s a child hood favourite of mine. Whether it be in mint choc chip ice cream or a mint slice, or after dinner mints it’s always been a favourite combination of mine.

SOY AND CHILLI BEETROOT VEGAN ‘POKE’ BOWL

Yes, yes poke is raw fish and this is a vegan recipe. As per usual I’m and playing it fast and loose with the food rules and calling things what I feel like. The steamed and marinated beetroot stands in for the raw fish in this ‘poke’ rendition and it’s full of fresh, light flavours.

EASY SWEET POTATO BUDDHA BOWL WITH MAPLE TAHINI DRESSING

This year I’m making an effort to mix up some of the more complicated recipes I do with really simple ones. Things with shorter ingredient lists, less processes and less time required to make them. Because I don’t want healthy to feel hard for anyone! I’ll still be writing things that have a few more processes and things because it’s also great to challenge oneself – just not every night of the week, right?

ROASTED ALMOND COOKIE DOUGH BLISS BALLS

I’ve posted a cookie dough bliss ball recipe before. Those one’s were a nut free version and they were yummy but I’ve got to say, roast almonds make these so much better! Both are vegan and refined sugar free.

CHIPOTLE TOFU BOWLS

Chipotle Tofu Bowls? Heck yes I’m in! You all know by now that I love ‘bowl food’ and have probably caught on to my love of Mexican too (recent enchilada and tortilla soup posts might have hinted at this..). If you’ve really be paying attention you may also have noticed that I’m getting into the occasional serve of tofu too.

CREAMY SPICED LENTIL DAAL

Yes I realise we’ve just had a heatwave of a weekend. But it’s cooled down a little now, and it’s winter in the other half of the world so I know some of you are going to feel like curry. Personally, I always feel like curry. I don’t think it’s just winter comfort food as a lot of countries that serve curry as a staple are typically warm balmy year round weather places. So this is summer appropriate. Plus it’s so friggin good. It’s my favourite dahl, creamy and fragrant and really easy to make.

CHILLI SESAME CRISPY TOFU BUN BOWLS

Crunchy golden tofu pieces in a spicy salty sauce with toasted sesame seeds, hell yes! Put it all on top of a pile of fine rice noodles and fresh slaw and I’m a happy girl. This is by no means a traditional bun bowl with all the right flavours and – but they were the inspiration, so don’t get angry at me for my description. Let 2017 be the year of you having fun with your food and letting go of the rule book.

ROASTED CAULIFLOWER AND LENTIL SALAD WITH BEETROOT HUMMUS

This salad is so pretty and full of flavour. it combines a couple of my favourite things… hummus and cauliflower. I’ve been really into loading roasted cauliflower onto hummus lately and then scooping it all up with some flat bread… or just a fork. But I felt I could make the whole thing look less beige. So now we have this.
