BASIL, CHARRED SWEET CORN, TOMATO AND BUFFALO MOZZARELLA PASTA

It’s time for another great pasta recipe! This one tastes like summer with juicy sweet corn, fresh cherry tomatoes, loads of basil and pesto and all finished with creamy buffalo mozzarella. Yum! I’ve been really into pasta lately. I try to limit it to once a week but sometimes I want to have it twice because there’s just so many different sauce variations you can do and it’s such a great low effort meal. My solution? Zucchini noodles! But not just zucchini noodles, it’s got to be a mix of REAL pasta and zoodles so I’m still satisfying those carb cravings.

CHICKEN SCHNITZEL WITH PARMESAN SLAW

This might be my favourite dish yet this summer. or at least my favourite chicken dish. I have a lot of favourites when it comes to food. And any way I can have chicken schnitzel in a healthier way is pretty damn exciting for me. This has all my favourite things about schnitzel: golden crispy exterior, succulent juicy chicken and great flavour. It has all these things with out being laden with oil from deep frying – yay.

COCONUT AND CHOCOLATE POPS

 

I love Weiss bars. My favourite ones are the chocolate and coconut ones you can only by in boxes of four at the supermarket. The fact that these only come in fours is never a problem, they’re delicious I want four, it’s that I can never get them when I most want an icey pole, on the way home from beach for example when you stop at the servo or general store. First world problems right? Well this recipe solves none of those problems, it makes 4, isn’t stocked at my local service station and I can’t find it at the beach. However, it is a slightly ‘healthier’ version and I don’t need to leave the house on a 41 degree day to get one.
