Green Quinoa Bowl with Crispy Skinned Salmon and Herbed Yoghurt

 

This quinoa bowl is so good, I’ve eaten it for breakfast, lunch and dinner – just not in the same day cos that’d probably be a little excessive. The yoghurt sauce with the vegetable studded quinoa, creamy avocado and crispy skinned salmon is such a great combination. The key to this dish is seasoning with lemon, it means you can use less salt and still bring out the flavour of the food.

SPRING POWER SALAD

Spring Power Salad 3 This salad is high in protein and fibre to keep you full for longer and it’s so delicious! Like, surprisingly delicious. BREAKFAST SALAD

This makes for a fantastic grab and go, pre prepped for your morning rush breakfast solution. Yes salad is your breakfast solution. Because it’s acceptable to eat salad at all other times of the day so why not breakfast? I know fruit salad is a breakfast staple but I don’t really like fruit salad. It makes me think of nasty hotel breakfast buffets or syrupy concoctions. This is a savoury salad, full of greens and they typical things you might eat for breakfast – just in a  salad.
