When the recipe title is basically just the recipe. Whoops, probs got a little too descriptive with that one. But I couldn’t decide what the most important part was because all these things make these nachos delicious and special. Also they’re nachos so by default a pretty great time.
Chipotle Tofu Bowls? Heck yes I’m in! You all know by now that I love ‘bowl food’ and have probably caught on to my love of Mexican too (recent enchilada and tortilla soup posts might have hinted at this..). If you’ve really be paying attention you may also have noticed that I’m getting into the occasional serve of tofu too.
I’m back! There’s been a few days of silence while I gave myself a little holiday break but I think it’s time to start sharing with you all again. This recipe is so delicious! Filled with extra veg and the perfect thing to serve with a simple green salad, I can’t wait for you to try it.
I don’t really know where to start with how delicious these are. And messy. And delicious. And colourful. And tasty. And did I mention delicious? They’re a winner and you can easily make the enchilada sauce in advance (or buy it if you live near somewhere that sells a good one).
As the weather warms up I’m in the mood for bowls of fresh food with crisp zingy flavours. And this bowl ticks all those boxes. It’s also getting closer to BBQ weather and this steak would be perfect on the BBQ.
I feel like this soup’s a bit naughty. Not in a bad for you way but because it’s using a summery ingredient in a winter recipe. But you know what? Sometimes a girl just wants what a girl wants and sometimes she finds a whole lot of roma tomatoes that might come from another state but at least they’re from this country so leave me alone. This soup is worth my ethical guilt.
This is a surprisingly easy breakfast or lunch as scrambled eggs take no time at all to prep. It’s also fresh and tasty and has protein, omega 3’s, vegetables and fruit in it – a super well rounded meal!
Confession: these aren’t really nachos. They aren’t made using corn chips because when they craving took I only had some slightly less than fresh pita bread on hand. I hate waste so wanted to use it and these were born from what was in my fridge/pantry. The perfect lazy, waste free dinner and so delicious I made them 3 times in a week.
This salad has a lot going for it, such as a whole rainbow of colour. Not to mention it’s super filling, full of protein, complex carbs, fibre and all the vitamins from that pretty array of vegetables. Speaking of pretty it also has that and I do think eating pretty food makes it taste better… we eat with our eyes and all that?
