I don’t eat burgers as often as I would secretly like to, so when I do I want them to be really worthwhile. Full of flavour and super satisfying. This burger has all of that and is also full of wholesome ingredients.
This is a very summery couscous salad made super delicious with… HALOUMI. Because cheese if life and haloumi is so golden and salty and delicious. It’s one of my favourite cheeses because of how it is transformed in heat. It also takes this salad from side dish to lunch by adding a little extra protein to satisfy.
I’ve loved twice baked potatoes since I was a kid. Whenever I was sick they’d be the thing I’d want as soon as I could eat. It’s the soft mashed filling and slightly crispy exterior. And all the extra flavour.

Because there can never be enough cheese. This flat bread uses 2 of my favourite cheeses: buffalo mozzarella and goats feta. Both have such a great creaminess to them but I love the combination of sharp feta and gooey mozzarella against the mushrooms on this flatbread. It’s perfect.

Add in that handful of greens for freshness and a side salad and you have yourself a meal you can be proud of.
