This week’s meal plans are teeming with delicious ideas and lots of variety… actually there’s an awful lot of mushrooms in that vegetarian one – but you can use different mushrooms so still variety right? I’ve tried to include recipes that use a lot of the same herbs and will pop in tips to make sure you’re not wasting food!
This is date night pasta. Whether that date is with yourself, a mate or your significant other. The kind of dish that’s impressive but very little effort so you’ll look like a whizz without getting yourself in a state. If tomatoes are in season it is beautiful with roasted Roma tomatoes stirred through, if not then just use a good quality passata. Or alternatively cherry tomatoes, halved and thrown in a pan with a little smashed garlic, chilli, oil and parsley and cooked until blistered is also great (I also make them a bit saucier (in all meanings of the word) by adding a little reserved cooking water from the pasta to loosen the tomatoes into a sauce when I do this.
Well hey there summer! Time for long nights sharing food with friends in the evening sun – and these are just perfect for that. The fresh prawns, creamy avocado and sweet corn are amped up with a little chilli and lime to make for a super tasty snack or starter. As a bonus they’re super easy to make too.
These ideas will help even the biggest meat eater happily include more vegetables, easily, every day. I am not vegan or vegetarian but there are many reasons why I try to include as many vegetables as I can in my diet. I was once a fussy eater, and there have been plenty of vegetables that I claimed to hate over the years. But now I have legitimate cravings for vegetables… seriously (obviously amongst the chocolate ones). Sometimes I don’t know who I am anymore…
