MEAL PLANS WEEK 13

It’s that meal planning time of the week again! I’m not big on the whole spending my Sunday’s prepping food thing but I do like to take 15 minutes to sort out what I’m eating for the week ahead. I sometimes don’t actually get past the planning stage, actually the shopping part usually happens on Monday after work. That said, if I spend a few minutes planning, writing a shopping list and making some delicious choices on Sunday then it makes my Monday go far easier.

DUMPLINGS!!! Give me all the dumplings, always! If somebody wants to do a causal dinner, I’m always like “should we get dumplings?” because I want them always and will take any excuse to go out for them. That said I also love making my ow and these are all kinds of perfect. A delicate filling, delicious spicy broth and greens – this is a health food blog after all.

LEMON, PARSLEY AND CUMIN BARBECUED CHICKEN

Often people don’t thinking of cooking chicken whole on the barbecue when they think of barbecue. And I don’t mean rotisserie style I mean right on the grill. It’s by far one of my favourite things to barbecue as it gives it so much flavour and such crispy skin. Cooking on the bone also helps prevent some of the dryness that you can get with grilled chicken.

MEAL PLANS WEEK 9

Happy Sunday folks! I plan on having a day of getting shit done, as balancing full time work and the whole ‘Healthy Hunter’ thing is well, a balancing act. See, my brain is fried. I’m also busy getting holiday prep sorted so I can have a real adventure and not be continuously checking this little blog. Need to learn to let go a little. I have been busily prepping the most delicious of meal plans for you this week. There’s loads of simple week night dinners in both the Vegetarian and Non vegetarian plans. I’ve also thrown in a little something that involves a slight time commitment in each one too. Because challenge helps us grow.

COCONUT POACHED CHICKEN SALAD WITH THAI PEANUT DRESSING

    This salad is all kinds of delicious! It’s light, has texture and all the flavour thanks to that satay like dressing. I love gently poaching chicken in coconut milk as it keeps the chicken flavoursome and juicy. No dry poached chicken in sight here! Just lean, healthy flavoursome food!

THAI RED CURRY BEEF STIR FRIED NOODLES

   My new thing is using curry pastes and a little stock or coconut cream to create the flavour and sauce. It’s so quick and easy and packs a huge flavour punch! You can make your own paste and freeze in portions or keep in the fridge if you plan on using it quickly, or just buy one. So many options to make your life tasty, healthy and easy.

Hello Sunday!!! It’s time to relax, potter, adventure and maybe do a little planning for the week ahead. This week I’ve got two delicious meal plans for you as per usual. One vegetarian, one for the omnivores. There’s a variety of flavour, from the spicy to the mild and from the trashy (buffalo chicken say what?!) to the slightly unusual (can I call it a meatball when there’s no meat in it???). BUFFALO CHICKEN AND RANCH SLAW SALAD

We’re getting a little trashy today! Buffalo chicken for the win. I love love love spicy things and buffalo chicken wings are the bomb. But they’re also not great for you… So I’ve tried to lighten things up a little here with a baked, not fried version of them. And they’re not wings, because I figured they weren’t going to be easy to eat in a salad bowl and this is essentially a ridiculous chicken salad.

It’s still salad weather so I’m going to keep posting new takes on chicken salads, because I love them.  This one is nice and simple with a really fresh zingy dressing. There’s yummy textures in there as well as some quinoa to keep you full for longer. I probably eat a chicken salad each week so I’ve got to keep switching it up to keep things interesting.
