Waffle Wednesday is back!!! Mostly because I felt like it was time for another waffle recipe! These are excellent for brunch or you can make them a little smaller and have them as a dessert. They’re gluten free and have a great texture too!
Happy Sunday folks! I plan on having a day of getting shit done, as balancing full time work and the whole ‘Healthy Hunter’ thing is well, a balancing act. See, my brain is fried. I’m also busy getting holiday prep sorted so I can have a real adventure and not be continuously checking this little blog. Need to learn to let go a little. I have been busily prepping the most delicious of meal plans for you this week. There’s loads of simple week night dinners in both the Vegetarian and Non vegetarian plans. I’ve also thrown in a little something that involves a slight time commitment in each one too. Because challenge helps us grow.
It’s Christmas this week! And this means that every meal I eat will be Christmas themed!!! Totally joking! But I will be eating this nice cream frequently both with and without that topping because it’s DELICIOUS. And super easy.

How pretty does this look?! And it tastes so so good. This could be a post run pick me up or breakfast, the smoothie is full of fruit and chia seeds for an amino acid boost. You could also add some protein powder if you’re that way inclined.
I love Weiss bars. My favourite ones are the chocolate and coconut ones you can only by in boxes of four at the supermarket. The fact that these only come in fours is never a problem, they’re delicious I want four, it’s that I can never get them when I most want an icey pole, on the way home from beach for example when you stop at the servo or general store. First world problems right? Well this recipe solves none of those problems, it makes 4, isn’t stocked at my local service station and I can’t find it at the beach. However, it is a slightly ‘healthier’ version and I don’t need to leave the house on a 41 degree day to get one.
How good does this look? What if I told you that it was healthy enough to eat for breakfast – a main meal – and tasty enough to enjoy as a treat? What if I said it would count towards your veg servings for the day? Yep. And it has no avocado in it, and the texture’s a bit like mousse/ a bit like pudding and can be frozen into paddle pop type things. Oh yeah, it’s vegan, gluten free and refined sugar free too. Hello summer heat. When the days start at totally unnatural temperatures and you still want your morning coffee these are the tasty solution. You need a really good quality almond milk for this recipe as anything too thin won’t have the same flavour or effect. You can sweeten the almond milk with a date or maple syrup – or leave it unweetened and let the bitterness of the coffee break through. If you wouldn’t normally sweeten your coffee then don’t sweeten this!
