MUSHROOM, KALE AND LENTIL VEGETARIAN SAUSAGE ROLLS

   Who doesn’t love a good sausage roll? We do these so well in Australia and I’ve been branching out occasionally recently and doing something I never thought I would. Eating vego sausage rolls. Sorry, ‘sausage’ rolls. I’m still calling them that as they’re the right shape and the same idea but just filled with veggies! Super nourishing and filling and all encased in flaky puff pastry.

BAKED SWEET POTATOES WITH CHEDDAR, BLACK BEANS AND GREEN SALSA

Baked sweet potatoes make for such a good lunch or dinner! You can make these ahead of time and just reheat things when you’re ready to eat. They take a little bit of time in the oven but you’re just waiting for most of that time – there’s not lots you need to do to make them delicious. You can read a book, dance round the kitchen, have a glass of wine etc while you wait for the oven to do it’s thing.

MEAL PLANS WEEK 14

Meal prep Sunday! There’s actually a roast recipe this week so if you’re thinking of doing a Sunday roast, or if the idea of a week day roast is ridiculous to you, then you could easily make that the recipe for Day 1. It’s a roast chicken though so achievable for a week day… as long as you’re not someone who gets home at 8, in that case roasts are definitely not for you on a week night.

SOUS VIDE SALMON WITH SMOKY MAPLE DRESSING

This salmon is tender and really flavoursome. The smoky sweet dressing is so yummy with the oily fish. I serve it with a fennel slaw to balance the richness.
