Meal Plans 5

I’ve spent the last week getting over a sinus infection and having a long weekend to get better gas been fabulous… if a little boring! But I’ve also discovered two fabulous series: Cheer (Netflix) and The Outsider (Foxtel) so I’ve managed to stay entertained!

I’ve also been making a huge effort to eat loads of nutritious foods, and have added an egg here or there at lunch to increase my energy levels while I’m recovering. I’ve also been sick on and off for a while so once I’m over this infection I’m getting a blood test to check iron and b12 levels etc. I’ll let you know how it goes!

But for now, what I’ll be eating this week, yep it’s a day late but it’s along weekend for me this is my Sunday!

Breakfasts

Carrot Cake Chia pudding layered with Green Smoothie because I’m eating the whole rainbow this week! The chia pudding. An be prepped at the start of the week and topped with green smoothie or coconut yoghurt. Or layered as below!

Avocado toast with hemp seeds, lemon juice and herbs.

Lunch

I think a dahl is needed this week, I’m going to prep this one today! Pumpkin Dahl with Tomato and Spinach

Cauliflower and Hummus Pita Pockets. All time rainbow filled favourite.

Dinner

This Gnocchi in a Rich Eggplant sauce is also amazing g baked with cheese! (Vegan Gouda if you want to keep it vegan).

Lime, Ginger and Sesame Noodle Salad, I put any veggies I have in this guy.

Chipotle Salmon Tacos with Mango Salsa, mangoes are in season and so delicious right now!

Crispy Chicken Burgers with Parmesan Slaw and Spicy Mayo – Friday night food, so satisfying! Have it with a side of loaded fries!

Snacks:

I’m big on fruit this week! Bananas topped with peanut butter and raspberries or chocolate shavings are a winner!
