Cinnamon Roti with Coconut Ganache and Caramelised Banana | My Rotimatic Review!

This recipe is insanely quick and easy to make and just as appropriate for brunch as it is for dessert. The secret to these perfect, flaky cinnamon scented roti is the best kitchen appliance I’ve tried in a long time. It’s an actual AI enabled robot in your kitchen. For real, I’ve had a robot called the Rotimatic cooking with me and it’s my new favourite kitchen appliance.

It’s a super versatile robot that sits on your kitchen bench and makes roti in minutes. Yep, you go from a bag of flour to piping hot, flaky delicious roti in minutes. It’s completely crazy and super fun. It can make endless varieties of rotis and even puris so I’ve found heaps of uses for it. I loved making turmeric roti to have with baked eggs or masala roti to go alongside curries. But what I loved most of all is using the roti as the base of a delicious sweet brunch idea that’s so much better for you than store bought cinnamon scrolls or pastry for brunch.

Just like with a cinnamon scroll it’s a perfectly cinnamon scented breakfast treat that will satisfy your sweet cravings, but thanks to the Rotimatic you know exactly what goes in it. I added maca powder to this recipe as it helps create a more caramel like flavour that complements the cinnamon and nutmeg. Maca is also a great way of adding extra nutrients to your meal as it’s rich in antioxidants, and has been associated with improving mood, energy and memory. There’s no sugar added to the mixture as the toppings add enough sweetness. I’ve also added vanilla extract to the water to help bring the flavours together and I always use extra virgin olive oil as it’s full of healthy fats and antioxidants.

Now about those delicious toppings, the chocolate coconut ganache is so simple to make and tastes really decadent. By grilling the bananas briefly you get a beautiful golden colour and extra sweetness without actually adding any more sugar.

You can make this recipe to suit more or less people super easily by halving or doubling the topping ingredients.

Serves 4 (in terms of toppings, will make more roti)

Ingredients

Roti

3 cups Aashirvaad Select Whole Wheat Atta flour

2.5 Tbs cinnamon

1/2 tsp nutmeg

3 Tbs Maca powder

1 tsp vanilla extract

250ml water

50ml extra virgin olive oil

Toppings

80g dark chocolate (85%)

1/2 cup plus 2 Tbs coconut cream

3 bananas, sliced on an angle into 1 cm thick slices)

4 Tbs toasted coconut

Directions

Make the ganache by melting the chocolate gently in a double boiler (heatproof bowl set over a pot of boiling water) and then remove from the heat and whisk the coconut cream in in a steady stream (tip: shake your can of coconut cream before opening)

Place a large non stick pan on medium heat and add your banana slices to the pan. Don’t overcrowd the pan, you can cook in two batches if you need. Allow to caramelise for a couple of minutes then turn and caramelise the other side. Set aside.

The roti: Mix dry ingredients together in a bowl and transfer to the Rotimatic flour container. Mix together the water and vanilla extract. Fill the water and oil in the respective containers. Select the number of rotis you want (I make 8 to serve 4). And then let your Rotimatic do all the work. Keep the fresh roti warm in a tea towel for serving.

To serve: Top the roti with a tablespoon of ganache and use a spoon to spread it in to a thin circle, top with banana slices and coconut and enjoy.
