Mango, Banana and Coconut Smoothie Bowl

This super simple smoothie is a must before mangoes get too ridiculously expensive! It’s perfect for breakfast or a as a light dessert on a warm day. The consistency is like soft serve and the flavour is super tropical – yum!

The suggested (and pictured) toppings are pretty but completely optional. If you don’t want to spend time swirling things into a smoothie bowl in the mornings then just don’t. Drink it. Or scoop it out of the blender like pudding.

The pale yellow colour is pretty by itself anyway it just makes it photograph better if I fancy it up a little bit. And I need all the help I can get to make my photographs look pretty cos I’m not the world’s best photographer.

Serves 1

Ingredients

1/2 mango

1/2 frozen banana

1/2 cup coconut milk

a few drops of vanilla extract

2 tsp white chia seeds

Optional, to serve: chunks of mango, toasted coconut, coconut milk to swirl

Directions

Place the first 5 ingredients in a blender and process until smooth and creamy. Serve with muesli or with suggested optional toppings. Or just drink!
