Meal Plans Week 51

Happy Sunday folks! This week’s meal plans are continuing the easy breezy summery vibe and are full of delicious and colourful things. There’s salads, burgers, pastas, seafood – all the good things;)

January is always a busy month in the blog world for me and this January has been huge, full of exciting new projects and partnerships and with an influx of new followers on social media and readers of this little blog. I’m guessing it might be because everyone likes to start the year off being ‘healthy’ whatever that might mean to you. Hopefully it doesn’t mean a crazy gimmicky diet you have no hope of sticking to! Hopefully it means building a healthy relationship with food and learning to cook more at home and eat less processed things? Hopefully!

Even though I’m not into resolutions I am into reflecting, not just in December or January but throughout the year. To make sure I’m continuously learning from the successes and disasters that come my way. For me that means, remembering that my body is an amazing and wonderful thing that needs me to help it not hinder it and that my obsessive and goal oriented brain should stay far away from calorie counting. With that in mind I’m going to continue to focus on getting good things into my body and not obsessing over keeping certain foods out of it. So get ready for a colourful year of food ahead!

I’m obsessed with seafood at the moment and have a killer prawn recipe coming up and one for barramundi, both are super delicious and I can’t wait to share them. But for the mean time lets revisit some of my favourite seafood recipes this week in the eat everything plan:

Plan A

Day 1: Sourdough topped with Broccoli and Feta Dip and Roasted Radish, Chickpea and Avocado Salad is the perfect light summer supper.

Day 2: Salt and Pepper Prawn Lettuce Cups: light and fresh, just like summer food should be!

Day 3: Chipotle Black Bean Nachos with Grilled Poblano Peppers, simple, easy colourful food is where it’s at.

Day 4: Salmon Soba Salad with Miso Ginger Dressing, you can’t go wrong with this noodle salad.

Day 5: Lemon, Parsley and Cumin BBQ Chicken with Tomato and Parsley Salad with a Miso and Extra Virgin Olive oil Dressing, it’s the perfect time of the year to take the kitchen outside.

Plan B

Day 1: Capsicum, Baby Kale and Fried Caper Linguini, make Monday better with this easy bowl of pasta.

Day 2: Sourdough topped with Broccoli and Feta Dip and Roasted Radish, Chickpea and Avocado Salad is the perfect light summer supper.

Day 3: Tofu and Kale Creamy Korma Curry, this curry is such a winner and one of the most popular curry recipes on the blog!

Day 4: Haloumi, Zucchini, Tomato and Pearl Cous Cous Salad, an all time favourite summery salad.

Day 5: End the week right, Chipotle Black Bean Nachos with Grilled Poblano Peppers

And you know what you deserve? A tahini double chocolate skillet brownie to share with friends and family 😉
