Meal Plans Week 43

This week has flown past thanks to the long weekend and I feel like I was only writing last weeks meal plans a day ago. But here we are again and this week is full of tasty things, as per usual because that’s the whole point isn’t it?

It’s definitely slowly easing into salad weather… and then being Melbourne reverting back to roast weather in the blink of an eye. But this weekend has me vibing warmer weather food so this week’s plans are full of fresh salad, tacos and noodles.

The salad content on this blog is probably just going to keep on increasing as the weeks go on until we’re in full summer mode. Which will hopefully happen before Christmas. I just had the most delightful long weekend that I mostly spent in the kitchen or taking photos of food or generally doing blog related activities and it was so great to get back into it. i can’t wait for December and January where it will be my sole thing I’m doing rather than a side gig I’m juggling. I’ve been teaching full time pretty much since May and it’s been lovely but also there’s so many projects I want to get up and running that I haven’t had the time to work on. So watch this space.

Now to those meal plans you’re here for…

Plan A

Day 1: Zucchini and Lentil Salad with Pecorino and Spinach Yoghurt Sauce, start your week right – eat a salad.

Day 2: Chipotle Salmon tacos. Because they’re unreal.

Day 3: Soy Braised Shiitake Mushrooms with Greens –  this is so delicate and delightful.

Day 4: Coriander and Lime Chicken Salad fresh and zingy and the perfect thing for your lunch tomorrow too.

Day 5: Asian Meatballs on Rice Noodles With Chilli and Sesame Sauce. What’s better than a big bowl of noodles to round out the week?!

 

Plan B

Day 1: Pesto, Broccoli and Baby Potato Salad, add a few boiled eggs and you can sort your lunches out for the week too.

Day 2: Burmese Style Noodles with Mushroom Curry Sauce. These have so much flavour and are different to any other noodle dish I’ve tried.

Day 3: Zucchini and Lentil Salad with Pecorino and Spinach Yoghurt Sauce, start your week right – eat a salad.

Day 4: Chipotle Tofu Bowls– this bowl packs a flavour punch.

Day 5: Soy Braised Shiitake Mushrooms with Greens these mushrooms have a sort of meaty taste and texture that’s really satisfying.

And this weeks bonus? If you keep finding cheap zucchini at your local market then you have to give these Chocolate, Zucchini and Coconut Cupcakes a go!
