VEGAN FRENCH TOAST

Dessert for breakfast? Or breakfast for dessert? Whatever your preference this vegan French toast will keep you happy. I’m not vegan and I’m still a big fan because it’s a little bit lighter than the traditional variety, the bread gets crisp and it’s lightly flavoured with the natural sweetness of the vanilla and cinnamon it’s soaked in.

I use a mixture of coconut and almond milk as I love the coconut milk flavour with the lightness of almond milk. You could use any plant based milk or even cow’s milk if you’re not dairy free or vegan. But then it’s not Vegan French Toast anymore so you’re going to have to go ahead and rename it 😉 By not using eggs you don’t get the eggy custard vibe from normal toast but I think i actually prefer this. It still helps the other flavours soak into the bread and you get the crisp golden exterior, soft centre but n heaviness. Yay!

I use the left over milk mixture as a sauce after thickening and warming it a little in a small pan, cos why waste that flavour right? You could also warm the strawberries but I’m a fan of the fresh burst of flavour. If you’re buying frozen, do warm them in the pan slightly before serving.

This is the ideal brunch recipe, easy to double or triple the recipe as needed or just make it for you self and heave a self love Sunday, Saturday or any day of the week.

Serves 1

Ingredients

2 slices sourdough bread

1/2 cup coconut or almond milk

1/2 tsp cinnamon

1/2 tsp vanilla

1 tsp olive oil

2/3 cup strawberries, sliced

1-2 tsp maple syrup

Directions

Mix together the milk, cinnamon and vanilla together in a shallow dish. Place the bread in this and press down. Flip and leave for 5 minutes. Turning once or twice during this time.

Put a meidum heavy based fry pan on medium high heat. Add olive oil. Once hot add soaked bread and fry for a couple of minutes. Flip and fry the other side. Turn the heat down and repeat cooking each side for a further minute.

Meanwhile, place leftover milk mixture in a small saucepan and bring to the boil. Simmer for a minute or two or until slightly thickened. Take off the heat and set aside.

Serve the French toast with strawberries scattered over the top, a drizzle of maple syrup and the reduced milk mixture drizzled over to finish.
