7 HEALTHY SOUPS TO KEEP YOU WARM THIS WINTER

You cannot possibly underestimate the warming, healing and happiness power of  a good soup on a cold day. I’m probably making at least 1 soup a week at the moment and filling my freezer with tasty things for cold days when cooking is just beyond me. Yeah even people like me who spend all their time, thinking about, writing about and cooking food can’t be stuffed sometimes. Make your way through this tasty little collection this winter for happy bellies and warm hands.

The great thing about soup is that it can be an anytime of the days food. You can use it as a based for baked eggs and you’ve got breakfast. You can put it in a mug and call it a snack. Take it to work for the kind of lunch you get excited for. Or have it at home, curled up on the couch with a glass of wine very close by.

These 5 soups are my all time favourites. There’s vegan, vegetarian and meat options because we’ve all got different preferences. I’ve also marked those that are gluten or dairy free, because we’ve all got different stuff we have to avoid. All are FODMAP friendly or can be easily adjusted to be so. Unless you’re unable to tolerate cauliflower (you poor thing) then obvs the cauliflower one just isn’t going to be your thing.

Cauliflower Soup with Parmesan and Quinoa Crisps – This soup is a favourite among my friends. It’s the one I’ve got the most  messages about and everyone has found it really easy to make. The quinoa in the crisps is totally optional.

Thai Red Curry Pumpkin Soup – this soup is so full of flavour and pumpkin is CHEAP in this hemisphere right now. Also a firm favourite among internet and real life friends (I do have some of those, this blog post was clearly planned so I could let you know this).

Chicken and Orecchiette Soup with Parmesan and Lemon – chicken noodle soup, made from scratch. Make this on a Sunday night to set you up for work lunches for the week.

Roasted Tomato and Red Pepper Tortilla Soup – this one isn’t entirely seasonally appropriate but you can sub in canned tomatoes and use frozen corn. I’m all about convenience. Plus it tastes like an enchilada so you probably want to try it. And You can add any excess shredded chicken from the above soup into it. Just freeze it already shredded from the week you try that one, yes I am unreasonably expecting you to make both this winter.

Creamy Vegan Mushroom Soup with Thyme – Made filling and creamy with cannelini beans this soup is a hearty winter option.

Spiced Carrot and Lentil Soup – this one is souper (sorry, so sorry) cheap to make and really filling thanks to the lentils.

Thai Red Curry Noodle Soup, Ramen Style (is it even acceptable to have 2 Thai red Curry based soups in one list? I did it anyway) This is my favourite thing to eat EVER. Do it.
