CHILLI, SESAME AND LIME POPCORN


I love snacking, especially when you’re watching a movie or sharing some drinks with friends. This popcorn takes a simple snack to the next level, making it very grown up and even more addictive than the original. Look out.

That’s as long as you’re a chilli lover, if not just scale back the chilli to your personal limit. Don’t get too heavy handed on the salt with these as you’ll probably end up eating a few handfuls, too much salt will kind of exhaust your tastebuds. Is that a thing?

The flavour combo is unreal, sweet and tangy lime, toasted sesame and spicy chilli all rounded out with the use of a little coconut oil to get the flavour to stick to your popcorn. There’s also nothing else like the sound of popcorn popping on a stove. You’ll never make it in the microwave again. Plus, you waste less packaging and money as buying popcorn kernels in bulk is so much cheaper than getting them in the microwave packets.

Ingredients

Zest of 2 limes

Juice of 1/2 a lime (chuck the rest of the lime in the drink you’ll be having while you eat this!)

3 tsp coconut oil

1 Tbs chilli flakes

1 tsp salt

1 Tbs toasted sesame seeds

1/2 cup popcorn kernels

Directions

Place 1 tsp of coconut oil in a pot (must have a lid) and heat until oil is melted and pot is hot. Add kernels and toss to coat. Cover with the lid, shake occasionally. You will start to hear the corn popping. Keep shaking the pot occasionally and continue to cook on high heat until the popping has become less regular and the majority of the corn is popped.

Turn off the heat and empty popcorn into a clean bowl. In a small bowl combine the lime zest, chilli, salt and sesame seeds and mix to combine. Put the other 2 tsp of coconut oil in the still warm pot and add the lime juice, stir around and add half the chilli , lime and sesame salt mix. Stir to combine (it will become slightly fragrant).

Add the popcorn back to the pot and toss to coat. Add the rest of the salt mix and continue to mix. Pour back into your bowl, scraping out any flavouring left inside the pot.
