MEAL PLANS WEEK 9

Happy Sunday folks! I plan on having a day of getting shit done, as balancing full time work and the whole ‘Healthy Hunter’ thing is well, a balancing act. See, my brain is fried. I’m also busy getting holiday prep sorted so I can have a real adventure and not be continuously checking this little blog. Need to learn to let go a little. I have been busily prepping the most delicious of meal plans for you this week. There’s loads of simple week night dinners in both the Vegetarian and Non vegetarian plans. I’ve also thrown in a little something that involves a slight time commitment in each one too. Because challenge helps us grow.

Can you tell I’ve been teaching again with that last line? Sorry! But both recipes have suggested short cuts in them if you’re not up for spending more time in the kitchen so I figured they were good choices for everyone.

I’ve done the whole 2 vegetarian meals for Plan A thing again because it’s more how I eat and will also help you keep your food bill down and your vegetable intake up!

It’s March now folks, and that means I’m off to Europe this month. Couldn’t be more excited! Send London tips my way now as that’s my first stop!

Now back to that whole meal planning thing you’re going to do today to make life easy. Shopping lists are at the end of each plan menu, because you deserve that sort of simplification in your life.

Plan A

 

DAY 1: Lime, Ginger and Sesame Soba Noodle Salad Fresh and vibrant bowl of goodness that can be ready in no time.

DAY 2: Coconut Poached Chicken Salad with Peanut Dressing This salad comes together really quickly and poaching the chicken in coconut milk gives it a yummy flavour.

DAY 3: Baked Salmon with a Grain Salad It’s in a bag! A little retro, a lot of greatness and soooo easy.

DAY 4: Cauliflower and Chickpea Turmeric Curry One of the simplest curries I’ve ever made and super tasty.

DAY 5: Meatballs with Gochujang Sugo I made everything else pretty simple this week so I could challenge you with something a tiny bit more time consuming. But so worth it. Especially if you like some spice! If you’re not up for the heat try them without the gochujang (a spicy Korean fermented bean paste). Sometimes fusion stuff actually.. fuses!

Plan B

DAY 1: Roast Capsicum Linguini with Pecorino and Rocket It’s Monday, you deserve pasta.

DAY 2: Cauliflower and Chickpea Turmeric Curry A very simple and quick curry that you can make with few ingredients.

DAY 3: Lime, Ginger and Sesame Soba Noodle Salad Fresh and vibrant bowl of goodness that can be ready in no time.

DAY 4: Broccoli and Parmesan Fritters I’m really into this fritters for dinner thing, I hope you are too… if not these would work well for brunch or work lunches too!

DAY 5: Sweet Potato and Black Bean Enchiladas Everything else has been so easy this week I think you should have a go at making these, not that they are hard they just take a little  extra time! Super delicious of course!

Bonus!

I’m not sure about everywhere else but Melbourne is having a warm week this week so I’m recommending some nice cream for dessert! To the uninitiated, nice cream is just blended frozen banana – it turns into soft serve. Real life magic people.
