WEEKLY MEAL PLANS WEEK 5

And it’s February! How’s the year going so far? Such an annoying question, because we all love to be reminded of how fast time passes don’t we? This week, for the majority of them, I’ve tried to make the recipes quick and easy to throw together after work. The whole making things easier for people when it comes to cooking healthier food is totally my vibe this year.

In each plan there’ s a recipe involving curry paste, because of my fructose issues I make these myself. However, you can just buy your favourite one! If you are making them yourself you can do it in advance and keep in the fridge until you need it.

I’ve attached the meal plan after each menu again. Let me know how you’re finding these and if there’s anything you want to change!

Plan A

Day 1: Sweet Potato, Peanut and Lentil Curry Let’s start the week off with a yummy vego curry so you’re getting a meat free day in. Plus it serves 6-8 so you should have some for lunches! (Freezes well too)

Day 2: One Pot 15 Minute Chicken Noodles, the perfect quick and easy mid week meal.

Day 3: Baked Salmon With Citrus Herb Yoghurt Sauce and Grain Salad because the 90’s were full of greatness. Cooking fish in a bag was one of those great things.

Day 4: Thai Chicken Burgers with Asian Slaw One of my favourite things to eat, fragrant grilled chicken burgers loaded with slaw.

Day 5: Crispy Chilli Paste Prawns With Rice Noodles and Greens If you don’t like it spicy feel free to tone down the chilli in this one – they are super fun and yum though!

Plan B

Day 1: Teriyaki Cauliflower Bowls a yummy bowl of goodness to start the week right!

Day 2: Sweet Potato and Spinach Massaman Curry One of my FAVOURITE curries, so comforting and delicious plus it serves 4 so you;ll have lunches sorted too.

Day 3: Lentil and Freekah Salad with Apricots, Feta and Red Cabbage add an egg to make this a more filling meal.

Day 4: Soy and Chilli Beetroot Poke Bowls This is the most complicated recipe of the week, because there’s a few processes as it’s a poke bowl. I’ve kept it in though because you can easily simplify and make it a quick and easy dish. Read the notes in the recipe.

Day 5: Burmese Style Noodles With Mushroom Curry Sauce Totally different to the noodles your used too and totally yummy!
