ROASTED BROCCOLI WITH PINE NUTS AND FETA

This is such a delicious side, or you can have it with some quinoa and an egg and call it a whole meal. The crispy, just caramelised broccoli pieces against the creamy feta and golden pine nuts is a perfect mix. if you’re looking for a stand out side for your holiday feast give this one a shot.

Plus it’s super easy to make and can be served warm or cold – just what you want when your organising a feast for family and friends. You can also barbecue the broccoli instead of roasting it if you’re like me and struggle to turn the oven on when it’s hot already. It seems so counter productive!

Speaking of sides and getting festive who has a menu plan all sorted? My family does a breakfast and late lunch on Christmas day then a big BBQ with all our friends on Boxing Day. All these meals mean there’s lots of time for us to get creative and try lots of different dishes. Seafood is always part of both days though because I feel like it’s not an Aussie Christmas without that? Waffles usually make an appearance on Christmas morning too, I’ll probably prep these guys on Christmas Eve to make things smooth sailing on the day.

Ingredients

2 heads of broccoli

2 Tbs olive oil

1.5 Tbs chilli flakes

salt and pepper

1/4 pinenuts

100g feta

Flat leaf parsley to serve (optional)

1 lemon, cut into wedges to serve

Directions

Preheat oven to 180 degrees celsius. Line a large baking tray with parchment paper.

Cut broccoli into bite sized florets and slice up the stalk into 3-4cm sticks. Toss with olive oil, chilli flakes and alt and pepper. Place in a single layer on prepared tray and roast for 30 minutes or until golden and crispy at the edges.

To serve scatter with pine nuts, feta and parsley. Have lemon wedges on the side.
