Your work lunch shouldn’t just be about a green salad and a can of tuna. Or a ham sandwich. Or two minute noodles. I mean, all these options have their benefits (maybe not the last one!) but they’re a bit boring and you deserve better. So much better.
I love fried rice. In all its varieties, including nasi gorneg. But then I was like, how good would these flavours be on rice noodles? Turns out, very good.
I feel like this soup’s a bit naughty. Not in a bad for you way but because it’s using a summery ingredient in a winter recipe. But you know what? Sometimes a girl just wants what a girl wants and sometimes she finds a whole lot of roma tomatoes that might come from another state but at least they’re from this country so leave me alone. This soup is worth my ethical guilt.
There’s a lot of bastardisation in this recipe. I mean bahn mi without the pate and the bread rolls is not a bahn mi! But this has all the other signature flavours and is super delicious!
This is one of those meals that you can make as easy or as difficult as you like. It’s also one of those meals that’s insanely comforting and spicy without being chilli hot. Tender pieces of sweet potato, bright green spinach, fragrant creamy curry and crunchy golden peanuts. Yum.
I’m having a love affair with pasta at the moment. Pasta with rich comforting sauces. Sauces full of things that are good for you. Like this one, it’s got tonnes of flavour, is full of vegetables and the sauce can be used in lots of different ways.
This salad is so tasty. Filling enough to eat on it’s own and it looks so pretty, look at those flecks of red, the creamy green avocado and golden toasted coconut. All the yum.
Soup! Because it’s been more than a week since my last soup post and therefore you might be ready for a new one to add to the rotation. This one is fragrant with spice and very filling thanks to the addition of lentils. It’s also stupid easy to make.
Look at those colours! Roasted celeriac, farro, quinoa and bulgur are combined with toasted seeds and nuts, grapefruit pickled carrots and a bright pink beetroot yoghurt sauce to make a killer winter salad.
