LOADED SWEET POTATO FRIES

How good are sweet potato fries? Do you know how you make them better? Load them with yumminess like they’re nachos and dig in, that’s how. I love this recipe, it’s super simple and super delicious – just how food should be.

You can also drizzle these in chipotle mayo but I was trying to hold myself back from using it on everything the first time I made them so I didn’t. That may have been and error, as the second time I did it and it was glorious. Don’t hold yourself back. If you’re a chipotle mayo fan go ahead and drizzle away. I’ve included it in this recipe so you don’t have to switch between.

Sweet potato fries are an excellent side, snack or super simple meal. They’re the kind of thing that’s great to share with a few friends and a few drinks. Choose a vegetable stock powder that has ingredients you’re happy with in it, if you can’t find one you can just use salt but the stock powder is a yummy addition.

Serves 2-4

Ingredients

2 large sweet potatoes

2 tsp olive oil

1 tsp vegetable stock powder

Guacamole

1 avocado

2 Tbs finely chopped coriander

1 tsp finely chopped red chilli, seeds and membrane removed if you don’t want it too hot

2 tsp lime juice

salt, to taste

Other toppings

2 Tbs feta

2 radishes, julienned

2 Tbs finely chopped spring onion

2 Tbs coriander leaves

Optional: Chipotle Mayo

1/2 cup greek yoghurt

1 Tbs mayonnaise

2 tsp chipotle sauce

1 tsp lime juice

Directions   

Preheat oven to 190 degrees celsius. Line an oven tray with parchments

Peel sweet potatoes and cut into 1-2cm thick batons. Place in a bowl, drizzle in olive oil and sprinkle with the stock powder. Toss to coat. Place in a single well spaced layer on your prepared oven tray. Use two oven trays if you need to. Bake for 30-40 minutes or until crisped up and edges have started to brown. If using two trays you may ant to do a switcheroo half way through.

Combine all ingredients for you guacamole and mash with a fork to combine. Check for seasoning and add more lime juice, salt, pepper or even a pinch of cayenne as needed.

Once fries are cooked, pile into  bowl, top with guacamole, drizzle in chipotle mayo if using, and sprinkle over the other toppings. Dig in.
