TROPICANA CHIA PUDDING

 Coconut, lime and passionfruit. Sounds like an excellent cocktail right? Also makes for a delightful chia pudding. This one is a nice change from whatever your usual mix is and it makes you instantly go.. ahh summer!

The ‘tropical’ nature would be amped up if you added mango, pineapple or lychees to the top. I had strawberries and that’s what I went with but any fresh fruit will work.

Chia pudding is something you have to think about the night before but it is so easy to make the biggest hassle is just remembering to do it.

serves 2

Ingredients

1/4 cup chia seeds

1 cup coconut milk

1/4 tsp lime zest

2 passionfruit

2 Tbs desiccated coconut

2 Tbs toasted coconut flakes

1/2 cup berries, mixed fruit of choice

Directions

Mix the chia seeds, pulp from 1 passionfruit, lime zest, coconut milk and desiccated coconut together in a jar (or sealable container of any kind), cover with the lid and place in the fridge overnight.

To serve, top with the pulp of the remaining passionfruit, the coconut flakes and the fresh fruit. Easy as that.
