FLUFFY CHOCOLATE PANCAKES

I love all kinds of pancakes, from delicate French crepes to the  fluffy American style. These are a quick and easy version of the latter and they have chocolate in them so you know they’re going to be good. Plus they are free of added sugar and full of protein to keep you full for longer. Add some fruit and a scoop of yoghurt and you’re good to go.

If you have the ingredients on hand I personally feel that making these 3 step pancakes (put ingredients in blender, blend, pour in pan) is easier than actually going out for pancakes. I mean, you don’t need to get dressed for starters. No need to get to the cafe, wait in a queue, spend a ridiculous amount of money on pretty simple ingredients. And if you share these with someone else they can be on washing up duty while you go back to bed. Perfect.

Plus they taste like cake. Cake made in a pan. Pancakes. Haha. Okay I’ll stop, here’s the recipe:

Makes 4 thick fluffy pancakes

Ingredients

1 egg

1/2 cup oats

1/2 cup milk

3 Tbs cacao powder

1 banana

1/2 tsp baking powder

1/2 tsp baking soda

butter or coconut oil

Directions

Place all ingredients in a blender and process until smooth a frothy. Place a non stick pan on medium heat, grease with butter or coconut oil and once hot add 1/2 cup of the mixture. Cook until bubbles appear on the top of the pancake, flip, and cook for a couple of minutes on the other side, until golden. If your pancakes are getting too brown turn down the heat.

Repeat with the remaining mixture.

Serve with a dollop of natural yoghurt, berries and a drizzle of maple syrup if you’re into that kind of thing (maple syrup is delicious so you probably are).
