CHIA AND OAT PORRIDGE WITH KIWI, BANANA AND PEPITAS

This is one of those recipes where the whole thing is almost in the title. But it’s very good. Really creamy and tasty with loads of nutrients. It’s also exactly what I need to eat at the moment as work has started again and I all of a sudden need to eat breakfast way earlier and thus stay full for longer. This does the trick.

It can be cooked on the stove or in the microwave, but if you’re microwaving it I strongly suggest you soak the oats, chia and coconut in milk the night before as it makes for a creamier texture. If you use a left over vanilla pod (instead of extract) this recipe also has no added sugar, which is a plus at breakfast!

Ingredients

1/3 cup oats

1 Tbs chia

1 Tbs coconut (shredded)

1 cup milk of choice

1/4 tsp vanilla extract or use a left over vanilla pod skin if you have one – there’s loads of flavour left on those!

1/4 tsp cinnamon

1 kiwi fruit sliced

1/2 banana sliced

2 tsp pepitas

milk to serve

Directions

Place the oats, chia, coconut, vanilla, cinnamon and milk in a pot and stir slowly over a low to medium heat until creamy. Add water if it is soaking up the liquid to quickly. Once the desired consistency is reached serve in a bowl topped with the fruit and pepitas ย and with a little extra milk.
